The Traybake Series Episode 3: Bramble Bars


The supermarkets are starting to have the big juicy berries that ring in the start of summer. This recipe combines those, with one of my all time favourite puddings- The Crumble. These bramble bars are essentially an 'on-the-go' #crumble, as you don't need your bowl and spoon at the ready to enjoy them! They are a wonderful balance of sweet and tart, with a buttery topping that always hits the spot!

I have always been lucky enough to live in a house with plenty of produce bearing fruit trees and bushes (along with a mum who is a master of the veggie patch)! I often get requests for recipes that can use up the abundance of #fruit that the garden produces, so mum, this one is for you! The recipe uses up quite a lot of #berries so if you would rather use a mixture of fruit then feel free to change up the recipe. It will be delicious with apples, berries, plums or any combination of fruits you have available. It is also really easy to turn into a #vegan recipe by replacing your butter with a plant based alternative which are readily available at most supermarkets.

Time taken: 1 hour + cooling time

Makes: 16 bars


Ingredients


For the crumble:

300 g flour

200 g oats

250 g butter/vegetable based alternative (cold)

180 g sugar


For the filling:

700 g blackberries

A squeeze of lemon juice

40 g cornflour (corn starch if outside of UK)

100 g sugar


Method:

1. Preheat your oven to 180°C and grease a large foil baking tray.

2. While your oven is heating up, weight out your butter, sugar and oats for the crumble into a large mixing bowl.

3. Cut your butter into cubes and rub into the dry ingredients.

4. Put 2/3 of the mixture into the tray and press down firmly so the crumble base is tightly packed.

5. Bake in the oven for 10 mins.

6. While your base is baking, wash your blackberries and mix them with your other ingredients so they are coated in the flour and sugar mix.

7. Pour onto the base and spread evenly.

8. Put the remaining 1/3 of the crumble mixture on top of the blackberries and bake in the oven for 30 minutes or until the crumble is golden brown.

9. Leave to cool before cutting into bars.



Rub the butter into your dry ingredients until it resembles breadcrumbs

















Press the base mixture firmly into the foil tray before baking










Coat the blackberries in the flour and sugar mixture










Cover the base with the blackberries and top with the remaining crumble




















Bake until golden brown



















Leave to cool before cutting into slices
