The Traybake Series: Episode 1: Easter Tiffin

This is the first in a series of blog posts I will be doing on traybakes over the next 5-6 weeks. I decided to do this mini series as a lot of the things I make, cakes in particular, are for special occasions and take a little time which I think may scare off some people who are not so used to baking. The point of this mini-series will be to make delicious treats with few ingredients and in very little time, so even if you are not a seasoned baker, these recipes will be completely accessible. Some, like this recipe, will not actually involve any baking at all. These recipes are very simple but also delicious, and are great whether you are looking for something fun to make with the kids or to whip up a quick and tasty treat for yourself!
The first in this traybake series is a tiffin. Tiffins are very underrated in my opinion, and are one of my absolute favourite traybakes. The sweetness from the crushed biscuits and smooth chocolate ganache in this recipe are complemented by chewy intervals of dried fruit and a wonderful crunch from the mixed nuts. Topped off with a layer of chocolate, how can you possibly go wrong!? For this tiffin, I used white chocolate for the tiffin base and dark chocolate on top. I also added a few crushed mini eggs in/on top of the tiffin because it’s Easter, and they are delicious so why not?! This is a perfect way to use up any excess Easter eggs but if you are making them at another time of the year then top with whatever your chocolate of choice may be!

Time taken: 1 hour
Serves: 15
175g crushed biscuit
200 g white chocolate
2 tablespoons golden syrup
150 g mixed fruit and nut
150 g butter
150 g dark chocolate
100 g of chocolate eggs (or your favourite chocolate)
1. Melt your butter in a pan together with the golden syrup and white chocolate
2. Crush your biscuits and mix in with the fruit and nuts and some of the crushed chocolate of your choice.
3. Once the butter and chocolate have melted, stir until well combined and combine with your biscuits and mixed fruits
4. Put into a foil tray and leave to cool in the fridge for half an hour
5. Melt your dark chocolate and pour over your tiffin base. Spread into an even layer.
6. Top with your mini eggs or chocolate of choice and leave to set
