A Batch Made in Heaven...

It's been a while since I've had enough time to bake. Life has been busy but I'm glad to be back with a delicious recipe for you all to try. I opted for a #cookie recipe to get me back into the swing of things, it's a delicious recipe which is sweet, indulgent and sure to be a hit…. and let’s face it, who doesn’t love cookies?! It is also a super #easy and quick recipe so you can always fit it into a busy schedule!

I don't know whether it is a British thing, but for me, there is a big difference between a #biscuit and a cookie. When I imagine cookies, I think of big, soft, chewy things which are less ‘short’ than their biscuit counter-parts. This particular recipe is a plain cookie, made with both granulated and brown sugar for a sweet and caramel-like taste, but of course I couldn’t leave it just at a plain cookie so I also stuffed them with Nutella to make them extra gooey and soft centred! This is a quick and easy recipe and once you have made the dough you can even freeze it and take them out to bake fresh another day. If you want to do this just make sure you add an extra couple minutes onto the cooking time.



Recipe: Makes 18 cookies

Total time: <1hr Cooking time: 12-15 mins

Equipment

Large mixing bowl

2-3 baking trays

Wooden spoon

Cooling racks

Ingredients

220 g of unsalted butter

350 g of plain flour

175 g of granulated sugar

150 g of brown sugar

2 eggs

2 tsp of vanilla essence

1 tsp of baking soda

Pinch of salt

Nutella- frozen (preferably in spoonful-sized pieces- I used an ice cube tray but you can just freeze the jar)

Method:

1. If you froze your Nutella in the jar, remove from the freezer to soften as you make the cookie dough

2. Heat your oven to 180°C and line 2 cookie trays with baking parchment

3. Cream together the butter and both types of sugar

4. Beat the eggs into the mixture

5. Add the flour, baking soda, salt and vanilla essence and combine into a dough

6. Break off small chunks of dough, roll into a ball and press down in the middle so you have a bowl-like shape.

7. Add a spoonful of frozen Nutella (or one of your Nutella pieces if you froze them separately) and fold the dough around it

8. Roll into a ball and place on the baking tray

9. Repeat with the rest of the dough, ensuring to place the dough balls a few inches apart on the tray (I baked 6 per tray and did it in 2 batches)

10. Bake in the oven for 12-15 minutes until they are a light golden brown in the centre and slightly darker around the edges

11. Remove from the oven and leave to cool on a cooling rack while you cook the other batches
